Ingredients

  • 400 grams whole grain pasta
  • 2 cups fresh microgreens (a mix of basil and arugula works well)
  • 1/2 cup pine nuts
  • 2 garlic cloves
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. While the pasta is cooking, prepare the pesto. In a food processor, combine the microgreens, pine nuts, garlic, and Parmesan. Process until finely chopped.
  3. With the processor running, slowly add the olive oil until well combined. Season with salt and pepper.
  4. Toss the cooked pasta with the microgreen pesto until well coated.
